Kara and I only realized after a failed experiment where the beans turned out to be way too soft that green beans need to cook for one minute under stress in order to come out tender-crisp. (This is how Kara and I like them.) If you want your beans to be softer, set the On-the-spot Pot for two minutes. But I hope you try this recipe to see how easy On-the-Spot Green Beans can be!
This recipe is a winner, especially the method of cooking the onions in the On-the-Spot Pot first and then tasting the green beans. Bacon and Gorgonzola are a great taste combination. After the second time I made this, there were some leftovers that I ate for breakfast.

Can frozen beans be used for this recipe?
Although I’ve never tried it, I would not use frozen beans inexperienced for this recipe. This is the right recipe for those pretty Costco packages of green beans that weigh two pounds. If you have skinny French-Model green beans, I’d reduce the cooking time by zero minutes. The beans will only cook because the Instant Pot is about to go into stress.
After cooking the bacon, remove it and leave 2 tablespoons of bacon grease.
In the bacon grease, cook the onion in finely diced pieces. Medium-high heat.
The onion will cook in 1-2 minutes while the beans are being cooked.
Add the unseasoned beans and 1-2 tablespoons of bacon grease extra, depending on your pan.
About 2-3 minutes is enough to finish cooking the beans in bacon grease. They can be cooked until they are tender-crisp, or however you like.

Once the beans are done, place them on a plate and top with Gorgonzola and crispy bacon.
What other cheeses can you use if you don’t enjoy Gorgonzola or if you just happen to dislike it?
Gorgonzola is my favorite cheese, but I know that not everyone does. If you don’t like this blue cheese with a pungent flavor, Feta Cheese or Cotija Cheese would be delicious in this recipe.
How to Make Pot Green Beans with Gorgonzola and Bacon
Reduce the bacon to short strips.
Turn On-the-spot Pot to SAUTE or HIGH HEAT and cook the bacon until crisp.
While the bacon is cooking, cut onion, trim green beans and reduce them into small pieces.
Once the bacon is done, remove it onto a paper towel.
Place 2 tablespoons of bacon fats in the Instant Pot.
Turn On-the-Spot Pot to SAUTE and HIGH HEAT. Cook the onion until it begins to brown.
Add unseasoned beans to Instant Pot with 3/4 cup chicken broth.
Lock lid and ensure that valve is closed. Set On-Spot Pot to HIGH, MANUAL for 1 minute.
While the beans are cooking, crumble Gorgonzola cheese.
As soon as the time is up, launch your stress.
Remove the lid and season with salt and black pepper.
Remove beans from the bag and arrange on a serving platter.
Spread beans with Gorgonzola and bacon.
Serve sizzling.
Reduce the thickness of the bacon slices by cutting them into strips. I like to break them apart a little with my finger, but that is not essential.
