“Formidable Kitchen Presents: Gaby’s Creamy White Beans”

Gaby, from What’s Gaby Cooking, is a woman who never misses. I have been cooking from her new cookbook Eat What You Need and was blown away by this unique, dreamy recipe.

These white creamy beans have a savory, herbaceous, slightly spicy flavor and are absolutely delicious. The beans are a combination of complete and blended cannellini for a lovely texture. You’ll also want some crusty bread with which to scoop each last bite.

This recipe is so easy to make, but it feels so unique and elevated. It’s a meal that you will be happy to share with friends, family, your roommate or just for yourself. Each recipe in her book is equally delicious, so be sure to pick up a copy as soon as possible.

These are the ingredients you must have to make creamy white beans
This recipe for white beans is easy to make, but it’s packed with rich, bold flavors, and you’ll enjoy the creamy, hearty texture. The beans are topped with a spicy herb oil, which takes the dish to a whole new level! Here’s all you need to make them:

Cannellini Beans: You’ll be cooking cannellini in water along with some fresh herbs, so don’t forget to use dried beans!
To cook the beans, you will need an onion, some garlic, fresh rosemary, a Bay leaf and a Calabrian chili.
Spinach : As soon as you have cooked the beans, stir in some fresh spinach to give them a boost of vegetables.
This home-made spicy herb oil is absolutely perfect. This oil is made from olive oil, fresh rosemary, garlic and extra Calabrian chilies.
Calabrian peppers are a type of chile that grows in Southern Italy. These chiles have a unique, spicy, smoky, and medium-hot taste that goes well with white beans. You can often find them in jars at the grocery store.

Nice northern beans, butterbeans, or navy beans are the best substitutes for cannellini in this recipe.

You’ll agree that there’s nothing more satisfying than scooping up meals with bread. Grab your favorite crusty baguette or bread and tear off pieces to scoop all the creamy bean goodness.

Easy steps to make creamy white beans
Cook dinner the beans. Rinse your beans and add them to a large pot of chilly water. Add the garlic, onion, rosemary, Bay leaf, and Calabrian chili. Bring everything to a boil then simmer until the beans are very tender. Remove any foam and add the spinach + sea salt.
Prepare the herb oil. While the beans are cooking, heat the whole spicy herb oil ingredients in a pan on medium low until the herbs become aromatic. Set aside.
Blend the beans. Pour 2 cups of beans and spinach into a blender, and blend until smooth. Pour the mixture back into the pot along with the remaining beans.
Assemble and serve. Pour the herb oil over the beans, then serve with your favorite crusty bread.

Storing ideas
Store any leftover beans in a hermetic container inside the refrigerator for up to 3-5 days. Simply reheat in the microwave or stovetop before enjoying.
